Why Dal Pakwan Is the Sindhi Breakfast Everyone Remembers

Dal Pakwan is one of the most recognisable dishes on a Sindhi breakfast table: crisp pakwan served with a seasoned dal, chutneys and fresh garnishes. It is substantial, celebratory and wonderfully textural.

In the written recipe from the Sindh Ji Rasoi cookbook manuscript, the dal brings together chana dal, moong dal and whole green moong. The three dals are cooked until soft, seasoned separately and then combined in equal portions.

The pakwan is made from a firm flour dough with ajwain, cumin, baking soda and oil for moin. It is rolled thin, pricked and fried until golden. The small details matter: a firm dough and even frying give pakwan its characteristic crisp bite.

Green chutney, khati-mithi chutney, chopped onion, coriander and other garnishes turn the plate into a table of contrasts. Dal Pakwan is a good example of why Sindhi food is so satisfying: it balances crisp and soft, tangy and savoury, simple and abundant.
