Written recipe adapted from the Sindhi Aloo Tikki chapter of the shared cookbook manuscript.
Ingredients
- 4 medium potatoes, boiled, peeled and mashed
- 1 green chilli, finely chopped
- 1 tsp cumin seeds
- 1/2 tsp red chilli powder
- 2 tbsp fresh coriander, chopped
- Breadcrumbs as needed
- Salt to taste
- Oil for frying
Method
- Combine the mashed potatoes, salt, green chilli, coriander, cumin seeds and red chilli powder.
- Add breadcrumbs and mix until the mixture holds together.
- Divide into portions and shape into round or oval patties.
- Heat oil in a kadai and cook the patties in small batches over medium heat until golden and crisp on both sides.
- Serve hot with green chutney, tamarind chutney, yoghurt or your favourite dip.
