Written recipe adapted from the Sindhi Aloo Tikki chapter of the shared cookbook manuscript.

Ingredients

  • 4 medium potatoes, boiled, peeled and mashed
  • 1 green chilli, finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 2 tbsp fresh coriander, chopped
  • Breadcrumbs as needed
  • Salt to taste
  • Oil for frying

Method

  1. Combine the mashed potatoes, salt, green chilli, coriander, cumin seeds and red chilli powder.
  2. Add breadcrumbs and mix until the mixture holds together.
  3. Divide into portions and shape into round or oval patties.
  4. Heat oil in a kadai and cook the patties in small batches over medium heat until golden and crisp on both sides.
  5. Serve hot with green chutney, tamarind chutney, yoghurt or your favourite dip.
