Ingredients
- Assorted vegetables such as brinjal, potato, onion and bhindi
- Salt to taste
- Red chilli powder
- A pinch of turmeric powder
- Coriander powder
- Cumin powder
- Amchur powder
- Oil for roasting
Method
- Wash, peel where required and slice the vegetables into rounds or thin strips.
- Mix salt, red chilli powder, turmeric, coriander powder, cumin powder and amchur.
- Coat each vegetable slice evenly with the masala mixture.
- Heat a tawa over medium heat and drizzle it with oil.
- Place the vegetables in a single layer. Roast, turning occasionally, until tender and lightly charred on both sides.
- Serve the Tawa Bhaji with roti, naan or rice.
